Sip and Flip: Nelson's Gluggle Jug Gin & Tonic Pancakes

Enjoyed for breakfast, lunch and dinner, pancakes stand as a simple yet satisfying staple in our everyday lives. Whether you like them sweet, savoury, fat or thin they are internationally adored and even celebrated with their very own day.

Gluggle Jug Gin Pancakes

Ok, ok, whilst officially it is known as Shrove Tuesday or Mardi Gras, Pancake Day is the traditional feast day that precedes the start of Lent on Ash Wednesday. Lent, lasting 40 days leading up to Easter traditionally involved fasting and abstaining from rich, indulgent foods such as butter, eggs, sugar, and fat. Shrove Tuesday represented the last opportunity to enjoy these ingredients, and what better way to savour them than with a scrumptious pancake?

Today, the world of pancakes has expanded to encompass a multitude of styles. From the classic British version, topped with a sprinkle of sugar and a drizzle of freshly squeezed lemon or orange, to the thicker and more indulgent American pancakes topped with everything from bacon and maple syrup to chocolate and exotic fruits.

In this recipe, we'll be sticking to the classic style, but with a delightful ginny twist!

Gluggle Jug Gin & Tonic Pancakes:

  • 50ml Nelson’s Gluggle Jug Gin
  • 300ml Tonic Water
  • 4 tbsp Caster Sugar
  • 1 Lemon (for juice and zest)
  • 200g Self-raising Flour
  • Pinch of salt
  • 1 egg
  • Oil for frying

Step 1:

Begin by creating the Gin & Tonic syrup. Combine 25ml of Gluggle Jug Gin with 150ml tonic water in a saucepan. Add 2 tablespoons of caster sugar and the juice from one lemon. Simmer until it thickens into a syrup. Let it cool.

Step 2:

For the pancakes, sift 200g of self-raising flour into a mixing bowl. Mix in 2 tablespoons of caster sugar and a pinch of salt. Crack in one egg, then blend in 25ml of Gluggle Jug Gin and 150ml of tonic water. Whisk the mixture until smooth. Preheat a lightly oiled non-stick pan on medium. Pour the batter to form pancakes of your desired size.

Step 3:

Finish by topping the pancakes with the Gin & Tonic syrup and a sprinkle of freshly grated lemon zest.
