A New Chapter at Nelson’s: Meet Stu Baillie
At Nelson’s Distillery, we have always believed that great spirits come from passion, patience, and a personal touch. These are values that continue under the care of our new owner, Stu Baillie.
Stu brings with him over a decade of experience running a family sawmill in North Devon, a business that has been at the heart of his working life for around 13 years. Built on hard work and dedication, the sawmill reflects the same honest, hands on approach that Stu now brings to Nelson’s.
As time has gone on, the physical demands of the sawmill have naturally become more challenging. With that, Stu has turned his focus toward a new passion, one that has quickly become something he truly enjoys, the world of spirits.
Alongside the sawmill, Stu and the team now run Little Silver Wines and Spirits, an online shop offering a carefully selected range of wines, spirits, and more. In under a year, what started as a new venture has grown into something we are incredibly proud of.
Since taking over Nelson’s Distillery, Stu has been committed to honouring what made the brand special, while carefully refining and improving where needed. We are pleased to say that we believe we have successfully recreated the original recipes, bringing them back to the character and quality they were known for.
Of course, like any craft there have been challenges along the way, but through careful work and persistence, we are confident we have now perfected the range.
For Stu, this is not just business, it is something he genuinely enjoys. Whether it is developing flavours, sharing a drink with friends, or hearing from customers, there is a real sense of pride in every bottle.
As a family run business, that is exactly how we want things to feel, personal, honest, and made to be enjoyed.
